FROZEN BLACKBERRY MOUSSE   (Serves 4)

Ingredients

  • 3 cups fresh blackberries
  • 1-1/2 cups powdered sugar
  • 1 tablespoon Kirschwasser
  • 1-1/2 cups heavy whipping cream
  • 1/2 cup sour cream
  • 4 mint sprigs
Set aside ½ cup of the berries for garnish later.

Puree 2-1/2 cups blackberries with the sugar and the Kirschwasser in a blender.

Beat whipping cream until fairly stiff and fold I the sour cream.

Whisk the blackberry mixture into the sour cream mixture.

Pour the mixture into freezer proof ramekins and put into the freezer for about 4 hours.

Before serving, take the mousse out of the freezer and aloe it to stand for about 10 minutes.

Garnish with fresh mint and the rest of the blackberries.

Helpful Hints

You can use almost any type of berry you like. Just make sure they have a lot of flavor.

You want this to be a frozen mousse, so let it stand outside the refrigerator before you serve it or it will be too hard.

You can garnish it with several different types of berries if you like.
