ORANGE RELISH   (Serves 6 to 8)

Ingredients

  • 2 oranges
  • 1/2 medium red onion, chopped
  • 1 teaspoon cumin seed
  • 3 sprigs chopped mint
  • 2/3 cup black Kalamata olives, pitted and chopped
  • 1/4 cup olive oil
  • Fresh ground black pepper
Peel the oranges and remove all the pith. Slice them crosswise and then into segments.

Place into a serving bowl

Peel the red onion and slice it in half. Finely chop one half of the onion and add it to the oranges.

Coarsely chop the black olives and add them to the orange mixture.

Add the cumin seed, olive oil and salt and gently toss.

Cover with plastic wrap and set in the refrigerator for at least 4 hours.
